At Suke Kuto, only the ripest red cherries are selected. These cherries undergo a pre-sorting process involving soaking in water to ensure that only the best continue to the drying stage. Spread out on elevated African beds, the cherries are carefully turned 5-6 times daily to promote even drying and prevent any unwanted fermentation. This meticulous process includes covering the cherries during rain and nighttime to prevent re-moistening, with the entire drying process taking 24 to 28 days.

The result is a coffee with distinct and captivating flavor profiles. Brewed as a filter coffee, Ethiopia Guji Koromii offers notes of jasmine, red apple, and raspberry, creating a refreshing and aromatic cup.
